Step 2 – Bread the fish

Ingredients
2 jalapeños, finely chopped
1 medium white onion, diced
3 medium potatoes
250 g Oaxaca cheese (Del Barrio), shredded
400 g organic nixtamalized masa (Masamor)
1 tablespoon organic white corn flour (Del Barrio)
1 teaspoon baking powder
Salt to taste
Vegetable oil (for frying)
Preparation
Step 1
Prepare the filling: Boil and mash the potatoes. In a pan, sauté the onions and jalapeños, then mix with the mashed potatoes. Add salt to taste.
Step 2
Prepare the masa: Combine the organic masa with the white corn flour and baking powder until well incorporated.
Step 3
Assemble the quesadillas: Flatten a portion of masa into a tortilla. Add the potato mixture and shredded Oaxaca cheese. Fold and seal the edges.
Step 4
Fry and serve: Deep-fry the quesadillas in hot oil until golden and crispy. Remove and drain excess oil. Serve hot.
